Antipasti
Ingredients:
1 cup Genoa salami
1 cup prosciutto
1 cup mortadella
1 cup provolone cheese
1 cup fresh mozzarella cheese
1 tomato
1 / 2 cup celery
1 red pepper
1 green pepper
1 red onion
1 / 2 cup kalamata olives
1 / 2 cup fresh basil
1 tablespoon parsley (for garnish)
1 / 2 cup olive oil
1 / 4 cup balsamic vinegar
Salt and pepper to taste
Directions:
Cut the meats and cheeses 1/2”.
Cut vegetables into 1/4” pieces except kalamatas.
Add the remaining ingredients and mix well. Decorate with parsley.
For best flavor, prepare one hour before serving.
